The agave sweetener provided by Lomeli Agave is a nectar cultivated from the blue weber agave, grown directly in the volcanic region of Jalisco. This is a raw nectar derived from the baked piña of an 8 to 10 year matured agave plant. The Agave Lomeli agave nectar is extracted from the piña once the proper baking temperature is reached. The Lomeli Agave procedure is one of a kind and has been a family tradition for generations.

The cultivation of the blue weber is extra special due to the height cultivation and maturity of the plant. The plant favors altitudes of more than 1,500 meters (5,000 ft) and grows in rich sandy soils. Blue weber agave plants grow into large succulents, with spiky fleshy leaves, that can reach over 2 meters (7 ft) in height. The blue webber agave also sprout a stalk (quiote) after a maturity of five years old. These can grow an additional 5 metres (16 ft); and are topped with yellow flowers. This stalk is cut off from commercial plants so the plant will put more energy into the heart of the blue weber agave (piña).
